Since adapting a GF lifestyle, I think the hardest part has been staying away from pastries. I really miss eating some cake with a cup of coffee or some chocolate chips cookies with some tea. But then I came around a great recipe that has given me hope and joy (I know! I’m very excited!). So here goes this awesome recipe 😉
1/2 cup White Sugar
1/2 cup Brown Sugar
2 sticks Butter
1 tsp Baking soda
1 tsp Salt
1 tsp Vanilla
2 cups Gluten Free Flour
1 1/2 cup Semi-sweet Chocolate Morsels
First, mix the white sugar, brown sugar, butter, eggs, baking soda, salt and vanilla. Then, add the flour and keep mixing it. Finally, you can use a spatula to mix in the chocolate chip morsels. Then you can place them in a muffin tray and bake them at 325F or 350F, for about 30 minutes or until ready. Please keep in mind that every oven is different. If you leave them less time, they will be chewy; if you leave them a little longer, you’ll get crispier cookies.
In case you just want a couple of cookies and you don’t want to bake all the dough, you can always put the unbaked dough in the fridge for some days, if you’re planing on baking them over the course of a month, then I suggest you put it in the freezer and bake cookies as you go.
